I am trying this with butter... sorry birdie but I cant stand the smell of desi ghee but I really like the method described here so I will follow that using butter :-)

That is what I meant about the desi ghee.I am not too fond of its smell and am concerned how the whole thing might smell.But I am going to try this recipe.Its different from the way I make it and I can use a change for our chicken…
butter is a perfectly acceptable substitute for ghee in the recipe. just avoid using cooking oil or banaspati, because that will not deliver the richness of flavour that brings the *deyg waala *taste to the quorma.
i used 4 tb of ghee, which is a relatively moderate amount. the final product wasn’t oozing ghee, and the smell of the ghee melded very well with the spices and remaining ingredients to create a lovely warm aroma.
it’s a very simple method involving no unnecessary putzing around, and authentic enough that it did quell my homesickness for just a bit when we had it for dinner.
I used 4 tbspn butter and 1 glass of water before dumm but I didnt get enough gravy or that oil on the sides :D

4 tb was the lower-end amount; i try and limit the amount of ghee when i make this for just the two of us. when there's company, i usually let it go to 6 tb as stated in the recipe.
really? i actually had to up the heat to thicken the consistency of my saalan with one glass (250 ml) water added. maybe your dumm waala flame was high? how much chicken did you use?
I would call this naan pizza. Made it myself for lunch. Made naan bread at home from scratch in the oven. Made mixed veges and keema. Topped naan with it. Some cheese etc. In to the oven again. For the times you don’t wanna eat keema with roti.
