Good recipe. They were very yummy

Re: Aaj kya pakaaya/khaaya

It was indeed.
Seriously, I don’t follow any specific measurements for the ingredients but here goes the recipe.
For serving 4 persons.
One large Chicken Breast Piece, Cut into really small Cubes.
Add, freshly finely chopped garlic,
a tspn Vinegar,
1/2 tspn Blackpepper,
Chinese Salt and Table salt to taste,
1 Egg, thoroughly beaten,
1 to 2 tbsp Corn Flour.
Mix it well. Leave the merination for minimum 30 minutes. Deep fry them and put them aside.
You can fry in two sessions. Each session should last no more than 4 minutes.
In a Vok, (or anything you like) Pour a tbsp Oil, saute a tspn fresh finely chopped garlic for about 30 seconds.
Add a very little water so that the garlic doesn’t stick to pan. Lower the flame the maximum.
Add, 1/2 tspn Red Chilli Powder,
1 levelled tspn black pepper,
Chinese salt and table salt to taste,
1 tspn Vinegar (Now thats the tricky part, in Pakistan, I had to use 4 tablespoon of Vinegar but here I have got a really strong Vinegar. So I use only 1 to 2 teaspoon of vinegar, so measure the ingredients according to the taste of your products).
1 Tspn Chilli Sauce,
1/2 Tspn Soya Sauce (again because the one that I have is really strong in taste)
1 to 2 Tspn of Worcestershire Sauce
Mix it well for about 30 seconds and now add Capsicum and Onions.
(Cut the Capsicum and Onions in Cubes. Onions should be cut in four equal parts and take the layers out).
Don’t overcook it.
You can higher the flame to medium.
Add Fried Chicken Pieces.
In few seconds, add a cup water and bring it to boil.
Prepare some paste of water and Cornflour to thicken it.
At boil, add the cornflour paste very slowly and keep it stirring.
My husband usually prefers a bit loose curry so I adjust the thickness accordingly, however the genuine shashlik is the one, when the sauce is all stick to the veges and chicken in it.
Follow your taste.
I always taste my food in last to adjust the spices and salt.
So you can. Taste it, add what you feel is require. If you think the red pepper is less, you should dilute some amount of red pepper in water and then add. Never add it directly. This tip can be used for any food when you feel the pepper is not sufficient. Sometimes the pepper doesn’t dissolve properly when pour directly.
If you intend to eat the dish after 15 to 20 minutes, do not cover the lid so that the veges dont loose their color.
As a suggestion, its mostly served fresh.
When re-heating, do NOT use microwave. Always re-heat it on stove. Due to the cornflour used in it, its not recommended to be re-heated in microwave. Not for hygiene purposes. I just can’t explain. The texture wont be fresh you say.
For rice, Boil the rice, (of course in pre-heated water and salt in it), when they are about 75% done, add some peas (not too much) and a well-beaten egg while keep stirring the spoon.
When the rice are done about 95%. Drain them and give dum for about 5 minutes. Don’t add Oil in rice.
Serve hot and enjoy :yummy:
