CHANA KHARAI

RECIPE

INGREDIENTS
... 3 Cans Boiled/Tinned Chickpeas
1 Red Onion – thickly sliced
1 White Onion – very finely chopped
1 tablespoon Ginger Garlic Paste
1 Firm Beef Tomato
3-4 Bullet Chillies
½ - ¾ Can Chopped Tomato
1.5 tablespoon Cumin
1.5 tablespoon Coriander Seeds - Crushed
1 teaspoon Chilli Flakes
½ teaspoon Turmeric
2-3 Cinnamon sticks
2-3 Bay Leaves
3-4 Black Peppers
3-4 Cloves
2-3 Fresh Green Chillies - sliced
1 Handful Fresh Coriander - chopped
Oil
Salt to taste

  1. Heat oil in a non stick wok
  2. Add ginger/garlic paste and white onions & cook for a few minutes - do not let them brown
  3. Next add the tinned tomatoes and mix well
  4. Next add all the dry ingredients and cook for a minute or two except the turmeric
  5. Next add the pre-boiled chickpeas and cook for a few minutes
  6. Next add turmeric powder and salt and mix
  7. Add the Red onion and thickly sliced beef tomatoes followed by chopped green chilli
  8. Lastly add freshly chopped coriander leaves and bullet chillies and remove off the heat

Do you boil the Spinach seperately and then add it to Qeema?

No just add it into the qeema towards the end, either frozen or fresh works fine. Or you can sautee it briefly, then mix with the qeema. No need to boil.

Ehl, I actually made this with leftover qeema from a masoor pulao recipe.

The recipe:

  1. Brown 1 onion
  2. Add 1 tsp ginger paste, 1 tsp garlic paste, 1 tsp salt, 2 tsp red chili powder, 1/2 tsp haldi, 1 tsp coriander powder, & 1 tsp cumin powder.
  3. Add 4 chopped tomatoes, 2 TBS qasoori methi, then 1 lb qeema
  4. Bhuno
  5. Add 1/2 cup yogurt, cover & let meat cook (this step is optional for palak qeema)
  6. Bhuno qeema until water dries
  7. Then add 1 tsp garam masala powder
  8. If using frozen palak, thaw and squeeze out liquid. If using fresh, wash thoroughly. Add to qeema and cook until palak turns dark green.
  9. Bhuno to dry out until you get thick consistency
  10. Adjust salt

Oh for those who have never tried palak qeema,do try it...it is very yummy...!
I make it quite often and sometimes I add a 10 oz box of fresh chopped mushrooms to it too.
Also on a side note,I have noticed fresh spinach somehow tastes better than frozen one in qeema.

I love palak over saag. I like palak with chicken or paneer, not so much with potatoes. One of these days I'll try making this dish created by chef Sanjeev Kapoor called Shaam Savera....where you stuff spinach patties with paneer...fry them...and cook them in a creamy tomato-based curry.
