again, no presentation coz I really dnt have the time !!!:teary1: plus no fancy camera and I mostly cook at night so the lights not tht great too. BB ZINDABAD !!!

So made : Brown butter banana bread, apple muffins, victoria sponge cake, daal makhani

Aaj ki dish - Pakoray

Pakora Recipe:
> Preparation time: approx. 45 minutes
> For 6-8 people
* 1 cup chickpea flour (Besan)
* 1/2 teaspoon chilli powder
* 1 teaspoon salt
* 1/2 cup water
* 2 finely chopped green chillies,
* 1 tablespoon coriander, finely chopped
* 1/2 teaspoon baking powder
* oil for frying
* An assortment of vegetables: Onions, cut into rings or sliced, potato
> Steps:
1. Stir the flour, salt and chilli powder into a bowl.
2. Pour in sufficient water to make a thick batter and beat well until smooth. Leave to stand for at least 20 minutes.
3. Stir the chillies, coriander and baking powder into the batter.
4. Drop in the potatoes/onions to coat with batter.
5. Heat the oil in a deep pan, drop in the battered potatoes/onions and deep-fry until crisp and golden.
6. Remove from the pan with a slotted spoon, drain on kitchen towel and keep warm.
7. Serve hot.

payal, the muffins look good, and yes daal makhani recipe do share.

here is the recipe i followed.

Dal Makhani. This is enough for 6 ppl as a main dish

Ingredients

  • 225g (8 oz) whole black lentils (urad dal)
  • 1.25l (2¼ pints) water
  • 40g (1½ oz) fresh root ginger, finely chopped
  • 30ml (2 tbsp) ghee
  • 12 garlic cloves, pureed
  • 200g (7 oz) brown onion paste
  • 10ml (2 tsp) paprika
  • 5ml (1 tsp) coriander seeds, roasted and ground
  • 5ml (1 tsp) cumin seeds, roasted and ground
  • 2.5ml (½ tsp) chili powder
  • 5ml (1 tsp) tomato puree
  • 200g (7 oz) tinned tomatoes, pureed
  • 45ml (3 tbsp) garam masala
  • 150ml (5 fl oz) single cream
  • 150g (5 fl oz) unsalted butter
  • 10ml (2 tsp) rock salt

Instructions

  1. Soak the lentils in plenty of water for at least 12 hours. Drain and rinse well.
  2. Bring the water to the boil , add the lentils and half the ginger.
  3. Boil for 10 minutes, then reduce the heat to very low and simmer for a further 1 hour or so, stirring from time to time.By this time, the lentils should have absorbed all the water and be soft not al dente.
  4. Heat the ghee . Add the masala and stir-fry for 1 minute or so. Add the garlic, onion paste and the remaining ginger and stir-fry for a further 2 minutes. Mix in the lentils.
  5. Add the tomato puree, tinned tomatoes and garam masala to the lentils. Cook for a further 15 minutes, adding a cupcful or two of water as needed so as to retain a pouring consistency.
  6. Put the casserole in a preheated oven, 180°C/350°F/gas mark 4, and cook for at least 3 hours. Check the consistency of the mixture every 40 minutes or so – adding water to maintain the pouring consistency. ( I did it on the stove itself)
  7. On your fourth check, add the cream, butter and salt and give it a final 20 or so minutes cooking in the oven with the oven switched off.

I added half a can rajma (kidney beans) as well, tinned ones.

today earlier , had chicken meat balls with teriaki sauce (yakitori sticks)

and then I made this special pizza with “chicken tikka” and tikka masala with lots of oregano on top. I kept the bread really soft, dont like too crunchy when it has tikka on top.

It tasted really really good.
