I follow Laura Vitale’s recipe for it… super easy.

2lbs boneless, skinless chicken thighs
1 onion, sliced thin
1 tsp paprika
1 tsp garlic powder
1 tsp onion powder
1Tbsp chilli powder
1/2 cup chicken stock
1 & 1/2 cup BBQ sauce
salt and bp
kaiser rolls

Mix the spices together with a bit of salt and pepper to ur liking… and sprinkle it on the chicken thighs liberally. Heat up some oil and brown the chicken thighs (seasoned on both sides), u don’t have to cook thru. Remove the thighs and add onion to the same pot… cook until the onions soften up and then add the thighs back in along with the chicken stock. Cook this for 20 mins until the thighs are done. Remove the thighs and dry up some of the stock if theres any left. Shred the chicken ising ur hands or forks… add back to the pot along with the BBQ sauce and simmer for 5 mins, toast the kaiser rolls and add the chicken on top along with coleslaw.

For the coleslaw, i just got slaw mix, added mayo, sugar and apple cider vinegar and lemon juice, some green onion as well. Mixed it together and let it sit in the fridge for an hour before using.
