I am very uspet today since i tried to cook roti for the very first time and i didnt get much such success the ata was so hard that i wasnt able to make peda
did this happen to any1 of u or is it just me
next year i am getting married in october and i dont want to disappoint my inlaws and hubby so therefore i need ur support since i am new to cooking there is a lot of help i need to master cooking q k mard k dil ka rasta hamesha stomach se guzarta hai ( i dont know how true it is) but i really want to win his and his family’s heart
the other question is about the use of pressure cooker . since i am a professional woman i will be cooking in nit and will not have much time i want to use pressure cooker my mother uses it but my inlaws have never used pressure cooker and they are of the view that the taste changes when you cook a meal with pressure cooker and it is not tasty. how many of you agree with this? i can’t tell the difference because i have never eaten a mail cooked withoht pressure cooker so i want your views.
Regards Ata , the only reason why it was so hard was coz you didnt mix enough water in it. When such a situation comes , you must keep goondo'ing it adding little water every few seconds , until it gets softer. Normally the easiest way to do the ata is , pour two cups water into three cups ata .. and roughly mix it , so that the white flour bit becomes all wet .. then leave it aside for a good 10 minutes. Finally knead it a little using very little water to wet your hands only. if the ata needs any more water at that point add teeny bit .. but usually you will find this way of doing the ata much easier.
Regards the pressure cooker , yes i agree that pressure cooker really kills the taste of food ... food should be cooked on slow heat , but then if you dont have the time for it , you have no choice really but to use the pressure cooker. Why dont you just use chopper instead , chop up the onions, garlic, ginger, tomatoes in it ... separately ... and they take lesser time to cook that way too.
I have never used pressure cooker because my mom and my inlaws are not comfortable with me using it.. they think I will blow up the house! I have this inner desire to use a pressure cooker someday but I am sooo afraid fo using it! I knwo some people who use pressure cooker for meat/beef etc but not for everyday use and I have eaten at their place.. it tastes the same to me!
Do you think you will be cooking everyday? If you are going to be working then I dun think you will have energy to cook everyday anyway! check out teh working women and cooking routine thread to get some ideas for everyday quick cooking!
For roti.. the secret is the atta.. you have to knead the atta, leave it out for 10-15 mins and then knead it again.. it turns out very soft..I dun knead atta but my husband does and he really believes that by leaving it out, it turns out great.. and then the roti.. I make the best roti if I say so myself :-D

and dont think that you HAVE to cook to please your husband and in laws.. you can always learn after shadi like most of us did.. six years and I am still learning!
Anything slow cooked turns out to be good, but you can not slow cook everyday and every meal so you need to convince you in laws about your limitation in time. You can cook things over the weekends and they can take care of cooking during workweek.
With atta, like everyone has said, it is the kneading & leaving it to set.
Pressure cookers are scary IMHO, if your family uses them they will know how best to deal with them, but 2 of my cousins have had scary experiencs with them, so I don't have any plans of going anywhere near one.
i love cooking wid pressure cooker as my mother n other family mostly use pressure cooker for cooking but my in laws never use it but as i m in UK n after marriage i started using here as well n now my two sis in laws got pressure cookers too coz in such a bz life u can do that slow cooking occasionaly but not everyday....meray liay to taste koi different nahi hai wid pressure cooker or widout pressure cooker but as i told my in laws dey never used it before but still they think that no difference in taste n seriously** if u dont tell them they could never guess that it either cooked in pressure cooker or not :)**...funny thing is my hubby was against pressure cooker in the start n said that i should't cook in pressure cooker coz of dis taste thingy but when i was preggo he used to cook in pressure cooker too kionk aaj kul or specially for working women n men its like life saver...
