Salaam Ladies!
Okay so I desperately need to learn how to cook… I am just not a huge fan of cooking…I can do anything but cook…so I thought I would turn to you guys to help me out… What do you think are some of the basic things that I should learn how to cook first? I want to deviate from my moms receipes you know try something different!
so any new receipes are welcomed!

Don't fret, cooking seems hard in the beginning. After making 2 or 3 dishes, you will know the patterns and be able to predict how to make other foods. Some of the patterns I'm referring to are the base (oil, onions, garlic), if there's curry- add tomatoes, possibly yogurt, masalas, then techniques ("bhoono" and "tharka"). The pressure cooker is your best friend. Once you've dealt with using the pressure cooker on your own once or twice, the confidence in cooking builds up.
Try to make daal and one vegetable dish, like paalak, when starting out. When learning how to cook, work side by side with your mom. Don't just watch her, it'll go over your head. You should be the one chopping the onions/garlic/tomatoes, adding the masalas, stirring the pot, working with the pressure cooker. She should tell you what to do, you do it, and she's there in case if you need help. Then review the recipe when done or write it down.
If you're not looking to make desi food, then make pasta. Go for a simple/basic lasagna, that may even be meatless. As long you make something and succeed or at least learn from the mistakes you make to improve the next time you cook.

I sure hope both ladies and gents can help me out. I am curious to know how everyone became pros at cooking. Non desi food is not an issue I can make that easily. Heck, I make a fantastic thanksgiving dinner from scratch the "american (turkey, stuffing, cranberry sauce etc etc)," way but when it comes to desi food... thats a different story lol
