I have been told I make a really good chicken pulao and anything that has to do with qeema (bhunna qeema/achari qeema/karahi kabab/meatballs).
I appreciate being told that :D,because to me it all tastes the same..:/

I have made the Khatti's famous triple berry lemon trifle and have always gotten compliments for that.Thanks for sharing that recipe...:).I am gonna make another one you once posted...something with pistachio pudding.Looked good..!

My friends say I make everything superb (alhumdulillah for such friends), however they like Cakes i bake a lot. Chicken broast also everyone of them like very much.

Sorryyyy guys I forgot to post khowsey:
For the noodles...many do egg noodles but I use plain old spaghetti boiled until its al dente as written on the box
For the curry:
Coconut milk - about 3 cups
Gram flour - maybe 3-4 tbsp
Salt - i go very light on the salt and try not to use any so not really used to cooking with it too much anymore. salt to taste.
Turmeric - 1/2 tbsp
Lemon juice - 2-3 tbsp
Green chilies - chopped about 3
Mix flour with milk, add haldi and chilies. Cook on low hear for an hour and remove from stove. Add salt and lemon juice. Mix well.
Here is something I do but no one else does ;) I do a nice tarka/baghar of bay leaves, lots of zeera and red chilies. It gives the curry a smokey flavor that I just lovvvvvve.
For beef stew/curry:
Boneless meat - 1 pound
Salt to taste
Ginger garlic paste - 1 tbsp
Onion - 1 sliced thin
Cumin seeds - 1 tsp
Red Chili powder - 1 tsp
Tomatoes - 3 medium
Original recipe calls for 6 tbsp of veg oil...I use 1 if that much.
In heated oil, add your onions until light gold. Add GG paste, cumin and fry for a minute. Add tomatoes and chili - mix really well and cook until tomatoes are tender. Add your salt and meat after that with 1 1/2 cups water and cook until the oil separates. This stew/curry is suchhhhh a hit.
Garnish: The fun part of khowsay is the garnish...loads of it:
samosa wrappers cut into thin strips and deep fried until crunchy (some people also use the crunchy stuff in chinese restaurants).
Fried onions
Dried prawns
Boiled and chopped eggs
Raw onions chopped fine
Green chilies chopped fine
Cilantro chopped fine
Lime wedges
Pickled cabbage
The dish is a layered dish with the spaghetti first, followed with the curry, then the beef and topped with any and all of the above.
Its a fun dish with textures and flavors galore...we make it every winter!!!

Reha, my fav topping for khowsey is fried garlic. I prefer the burmese/east indian recipe where the chicken is actually cooked in the coconut curry, it’s a little lighter than the karachi/memon style recipe you’ve given…but it’s ALL delicious!!! ![]()

My favorite thing about this dish is how every family makes it a bit differently so there’s a slight variation when you have it somewhere else.
One of our family friends makes it and they also have the chicken cooked in the curry…their’s is closer to the one you’re describing.
I’ve never had it with fried garlic but it sounds positively yummayyyy!

Mutter (green peas) palao, Channa (chickpeas) palao and Chicken palao.
The best I make is mutter palao because I have made it several times so good at it, then channa and then chicken palao. The recipe is more or less the same for each except channas have to be boiled before cooking in rice and chicken would have some additional spices.
Recipe for mutter palao is:
Fry onion in oil until light brown/golden. Add garlic paste, cook few seconds. Then add green peas, cook few seconds. Add zeera, green chillies, cook few seconds. Add coriander power, cook few seconds. Add little bit of water if/when needed, enough so that greenpeas are cooked and little bit of masala is seen sticking to the greenpeas in the pot. Then add water, salt. Increase the flame for it to boil. Add rice in boiling water. Cook until little bit of water is left in the pot. Reduce the flame. Cover with lid for 7-10 minutes.
I usually sprinkle little bit of more zeera on the top of the rice before covering the pot. Sometimes I also add tomatoes though my mother says if you add tomatoes to palao, that cannot be classified as ‘palao’ as tomatoes are added in biryani.

Best chana pulaoo I ate was in Anar Kali/Data Darbar area (Lahore). I am still searching for the recipe that can make something close to that. That chana pulaoo was simple yet tasty!!!

its exactly the same as mutter palao except channas have to be boiled before cooking in the pot along with other spices. Also channas tend to absorb spices slightly more than green peas so the quantities of all the spices should be slightly more than what you would put in mutter palao. The remaining recipe is exactly the same. Sometimes I add tomatoes and biryani pattaas too but my mother doesn’t like it because the palao becomes more biryani like and not the ‘simple’ tasting palao. I do it depending on my mood for flavor.
the tip is to cook for a few seconds every time you put a new ingredient/spice. So that you’ll feel the aroma of each ingredient while eating.

Okay lately I’ve gotten really good at qeema…any kind of qeema:
Gobhi qeema
Bhuna huwa qeema
Aloo qeema
My personal favorite is chicken qeema with aloo and saag in it.
