yep i got that for my pulao today recipe by mostar95 :)

hmm I just stick with one of those stainless steel spice balls... Same thing as the cloth, but you can just keep on washing it and reusing it.

UPDATE: Day before yesterday I made yakhni pulao, almost following Morstar95's recipe. I just didn't put unpeeled garlic in it, instead peeled a few cloves put that in. I also didn't bother blending my yogurt with the green chillies, just finally chopped the chillies. And umm, I also didn't put in the aroma masala she mentioned or the kewra/ biryani color in it.

Eitherways, it just turned out FABBBB!!! the rice tasted so good, I think I've got the rule of thumb now, you have to make sure that the yakhni's pretty concentrated and that the rice are presoaked so that they can cook in that little yakhni water. So to start with, I just put barely enough water to cover the meet and spices when I was filling in my pot to make the yakhni...

Morstar95, you're a sweetheart. Thank you SOOOOOOOOOOOOOOOO much for your help. I absolutely love yakhni pulao and I can eat it everyday.. and now I can atleast make it good enough to eat it myself.. ;) Thanks again!

You know biryani colour is not harmful if you can get hold of the pure one.

The pure one is made from the flowers of that small tree called "har singhar" which is grown in India and in Sindh.

also adding shan pulao biryani masala when cooking the chicken pieces gives the pulao a good taste

Thanks. Please do dry "low cost easy to cook biryani"! Thats a unique taste which is in between biryani and pulao!

Chicken 1 and half kg
Rice 1 Kg
Adrak/lehsan paste 4 tablespoon
Sufeed ilachi 6 (pierce them)
Laung 10-15
Oil One cup
Green rocket chillies (mirch malir) 15-20
Aroma masala 2 tablespoon
(Jaefal, jawatri, zera and sufeed illachi ground into a powder).
Salt 1 and half table spoon
Yougurt 375 grams
Kewra water and zarday ka rang

Mash the rocket chillies. Cook the meat with mashed chillies, yougurt, aroma masala, ginger/garlic paste, long. When meat is tender, dry up the water.

Boil rice. Put it on the meat stuff, put oil(after heating properly) and put kewra water and zarday ka rang.
Simmer for 10 mins.

One question, what quantity of ilaichee, zeera, jaifal and javatri is used to make a perfect aroma masala powder?

2 Nutmeg, 15 grams mace, 1 tablespoon cumin and 10 cardemoms.

Bumping this thread cuz Mostar95's yakhni pulao recipe was GREAT!! I used goat meat, and the only thing I omitted was the bay leaves, didn't have any on hand. Great recipe!

Sadzzz is right, this is the correct ratio. However, the longer you soak your rice, the less liquid you need. This ratio works for rice soaked for 15 mins or so. But if you soak 3 cups of rice for an hour, you should reduce the liquid to maybe 4.25 cups and just add a splash towards the end if needed.

Also, I've tried bajias recipe and it was decent. Maybe not mouth-watering punjabi pulao, but still pretty freaking good.

My first experience with yakhni pulao was bad.. first time cooking in susraal under my MIL’s eye.. I threw the yakhni down the drain after getting the meat out.. i thought it was just to flavour the meat :smack:
She said “Chal put, jaa ke baith ja”
