Sarah--- This way the rice wont be soggy. but at times this much water isnt enough. So you test the rice, if its not soft enough ,then just before you cover it with a wet dish cloth, sprinkle some water on the rice, then cover.
It obviously came from someone whose favourite subject wasnt English. Btw I enjoyed my many math classes even though at times I wished to burn the books.
Maniac, you know this is one dish which I love so much that I told my mom to teach me how to cook so I can cook it whenever I feel like eating it. But you know eachtime, some new taste comes up but still they look like “Mattar Palao”
Actually, I dont even remember what my mom told me how to cook it but I boil 1 big or two medium sized onions then put oil and fry them. Then put alot of things like… zeera, cloves, black corns, etc. etc. etc. (but not alot). Fry them all together. Then put mashed tomatoes (2 medium)… or tomatoe paste.. oh yeah… just a little crushed garlic and ginger also… but very very little or you’d spoil the taste. In the end, add mattar. Fry them with all this masala. Then add green chillies, salt. Then check when they are cooked, add water (For one big mug of rice, add 2 mugs of water)… Boil them until the water has evaporated. That’s it.
You know when I cooked this dish for the first time, I added sugar instead of salt. It was a funny taste. It took me too long to realise why it tasted funny.
Now mostly I can cook it well but sometimes I mess up.
I duno if this is gonna help but using your sense of smell helps telling if the rice is cooked or not. When its cooked the rice gives off this nice bheeni bheeni khushboo of starch.
Same for pasta too.
2 cups of rice, regardless of any amount of water takes ten minutes to cook on a gas ka stove. After ten minutes just pick out a grain and put it in your mouth, If its soft its cooked if its hard then its not.
