Maybe some people don’t want to come across as desperate or perhaps it’s taboo in our society to openly admit such things

Lets see if I can describe this in English.
Why is that women want a nice guy to date, and when the guy is nice they get bored and when he diverts his attention away to another girl they suddenly become interested in the guy again?

why do some girls act as if they are super models and claim that htey've been asked to model. When they clearly are NOT?

I think many people want to be mentally stimulated in their relationship. When they lose interest, I don't think it is simply because the other is nice but because they are not mentally stimulated.
I think the second point has to do with feeling socially challenged and being attracted to one of similar social desirability. I think people feel better about themselves when they feel that to have earned the interest of a given person reflects well on their self worth. When one feels they can take another for granted or that it is too easy, it can turn one off and create a feeling that there is no social challenge/accomplishment. If the attention begins to drift, perhaps it questions their ability to take for granted and creates a social challenge. In some cases, this type of resopnse could be related more to insecurity in the rejector (who relies on the social attractiveness of the other to get a sense of self worth) than any issue with the rejected.
So that's the take of a guy. Take that as you will.
This is classified as the "Avaricious or Covetous Type " a sub-category of the “Delicate Pastry/Strawberry Tart” variety . 
In this category the feline thinks she MUST have what is clearly not hers and will do everything in her make-up bag to lure the unsuspecting male into her den !
