I love baingan ka bharta.. soo yummy yummy!
I usually get the smaller sized baingan. Preheat the oven to 400 degrees. Leave the stem & skin on the baingan and cut twice from the bottom towards the stem making a + (plus) sign at the bottom, it should become 4 pieces attached to the stem.. after that place in a oven for about 35-40 minutes, turn them over after 15 minutes..
In the meantime, add a tbsp of oil to a pan and add 1 chopped onion to it. Brown it a little and add the tomatoes and cumin powder, salt, red chilli powder, kalonji, 1 bay leaf and mix well, add a little water and let it simmer for a few minutes
After removing the baingan from the oven place a few in the above mixture, cut up the rest and mash it into the mixture. Let it cook on low heat for about 25-30 minutes.
Garnish with green chillies and fresh coriander :)
