two questions
the milk in onions so they don't burn, is that for the onions you make for masala?
Also
do i store onions and potatoes in the fridge? i usually do and they spoil...i think it's b/c they are old but realized people would keep onions and potatoes in a cool dry place for months in the old country.

1) U kno sometimes u want to make onions golden in color not actually golden-brown, so incase they start getting too brown adding milk stops them from frying/burning...
2) onions and potatoes are best stored in a cool, dry place instead of d refrigerator.

A tried and tested method to keep your corriander/mint fresh...
line a container with newspaper or a paper towel and put the cleaned leaves in it, bring the edges of the liner over the top to cover it all up. it'll stay as fresh as the day u purchased it for upto a week atleast.

oh and adding milk cream or sour cream to an omlette fluffs it up too, even milk actually but u can't leave it for too long.

ok for those of you who do make the ginger/garlic or chilis and freeze..how do you avoid the garlic smell getting into everything else in your freezer? That's my big issue...my mom used to do it and we had garlic infused ice cream...till we got a separate fridge.

We use the top compartment of the freezer - the fast freeze section to put the garlic/ginger in (in the ice cube trays(. It only takes a couple of hours to freeze.
If the compartment smells a bit after, wipe clean with a damp cloth with lemon juice on it.
The garlic is then stored in strong plastic freezer bags

my mom used to put some oil in the ginger-garlic paste she made9i dont know if it is as a preservative or for reducng the smell) and fills glass bottles with lids(Or the washed and dried jam bottles) with it and freezes all of them and keep one in the refrigerator for daily use..and since they are in tightly closed jars,we have never had any smell issues.. i do the same with it now

Before you cut chillies coat your hands with little oil...the left over flavour/sting of chillies will be easier to wash out of your hands.
