First, we are not discussing Turkey vs. Iran here but rather Ottoman Empire vs. Persian empire. Many a books have recorded that there were at least skirmishes between the two.
There is no question that after the fall of the Arabs, the Turks became the torch bearers of Islam. There is no question that it was the Turks and Kurds (Salah ud Din) finally put a stop to the crusades. Som of the greatest Muslim scholars originated in Turkey/Asia minor/Samarkand. But Ottoman Empire was not perfect; where it was once a rival to the Greeks and Roman empires, its fall was just as spectacular. Take this into consideration: the motive of Ottoman Empire’s expansion into Europe was not always Islam but land.
I won’t discuss the Iranis here as I am anti-Shia. I am surprised that you are comparing the Turks to the Arabs. Think carefully about this: If it weren’t for the Arabs, you and I would have been a bunch of Kafirs. To say that Arabs weren’t effecting at spreading Islam through out the world then you should think about who took Islam into Europe first. Not Turks but Arabs. It was during Umar
time that Islam reached as far as South France.
Pakistan: There was no Pakistan during Ottoman Empire, however, there was the Mughal Empire which made its own name for the cause of Islam.
