I think you are buying mutton - the old sheep which takes 2 hours on slow heat to tenderize. Lamb here in UK does not take that long - only in an hour!

If you are making curry then the Key is to cook it in its own fat , use very less amount of oil or ghee , bhonafy it with adrak and leyson till It becomes tender and then add your tomatoes !

I remeber slightly how my mum used to make it, and that was adding little oil onions green chillies adrak leyson and then bhoonify it but i dont remember what to do after ![]()
