Directions:
**Preheat **oven to 375°. Trim all fat off chicken. **Season **chicken with salt, pepper, oregano, and lemon juice. Place in a roasting pan and bake for about 35 - 40 minutes. When chicken is cooked, remove from the oven and sprinkle with feta.
**Broil **on low for about 2-3 minutes, until cheese is golden brown (careful not to burn).
Preheat oven to 400ºF. Cut spaghetti squash in half lengthwise and scoop out seeds and membrane. Season with salt and bake about 1 hour, or longer if needed on a baking sheet, cut side up.
If you prefer the microwave, cut squash in half lengthwise, scoop out seeds and fibers and place on a microwave safe dish and cover. Microwave 8-9 minutes or until soft.
In a large deep sauté pan, melt butter and add oil. Add onions, celery and carrots and sauté on medium-low for about 3 to 4 minutes, until soft. Add the beef and season with salt. Brown the meat and cook, breaking it into smaller pieces with your spoon until cooked trhough. When cooked, add the tomatoes and adjust salt and pepper to taste. Simmer until it reduces a bit, then add bay leaf and cover, reducing heat to low. Simmer at least an hour, stirring occasionally.****
**When spaghetti squash is cooked, let it cool for about 10 minutes. When cool, use a fork to remove flesh, which will come out in spaghetti looking strands. Keep covered and set aside keeping warm until sauce is ready. Serve topped with meat sauce and grated parmesan cheese, if desired.

Dont know if you have a Whole Foods in your area but they sell these amazing wraps made from flax… 5 net crabs only. So good with some hummus and veggies.. fajita chicken or my personal favorite … tuna salad!
I need to switch back to low carbing, as I feel healthier eating that way, sleep better, look better and have fewer colds. I did start a thread a while back with low carb recipe’s http://www.paklinks.com/gs/household-affairs-and-cuisine-corner/521225-low-carb-recipes-for-inspiron.html, and have plenty more to share, so will post them here. Generally when I low carb,I eat a high fat low carb diet, so don’t eat any bread, or rice, or any extremely carb fruit or veg. I also switch to lactose free milk, drink at least 8 glasses of water a day, and avoid using sugar substitutes. I also reduce my caffeine intake, as I notice the caffeine highs and lows more without sugar and don’t like it.

They taste awesome too…you can eat them like you would roti.
I am also getting some for tonight…we do Tuesday Tacos once in a while so let’s see how it turns out!
