Re: SIMPLE CAKE RECIPE
1 cup castor sugar (Otherwise grind the sugar a little first to make it finer)
1 cup butter
1 teaspoon of vanilla essence
1 cup lightly beaten eggs (approx 2 eggs broken into cup)
1 cup self raising flour (or maida and 1 level teaspoon baking powder). Use 1 and quarter cup for a heavier cake if you want to ice.
Pre-heat oven to about 180 or 190 degrees. (medium)
Long way - Beat the sugar, vanilla essence and butter together until light and fluffy. (electric whisk is best - or use a wooden spoon, takes longer).
Add the egg to the butter mix BIT BY BIT bcos it may curdle otherwise. Beat in between adding egg. If it curdles, just add a bit of the flour.
Sift the flour into the egg mixture and FOLD in using a metal spoon. If it is too stiff, add a spoonful or so of warm water.
Spoon batter into cake tray, level, then bake in a medium oven (say about 190 degrees?) for about 35 mins. Thats the bit I'm not too sure about really, everyones oven is different.
If the cake is not cooked enough and u open the door to it, it will drop (go flat in the middle). So u have to be careful. If u have a glass oven door, u can keep an eye on it.
EASY WAY - Put all the ingredients together in a mixing bowl and beat continuously for one minute. Probably NOT more than that. Pour into a tin and bake.
