For BBQ dishes I add it when I start to marinate , so the kewra aroma seeps inside whatever is being BBQed.

My dad likes to use vinegar in marinades and baking as well, I think. Gives the dish some acid/tang to it.

Vinegar is pretty good... apple cider vinegar is awesome for cooking.

Kinzz... I think it is... but im not 100% sure...
I grind fresh dhania/zeera for all my cooking...gives everything a great flavor...

I tried adding honey to the tikka masala I made just yesterday. It gives it a great flavor. I've seen people add some brown sugar to curries they do as well. On this one show on Masala TV, they showed a Thai recipe where they added brown sugar.

Made chicken tikka masala over spring break about two weeks ago and added about a tablespoon of wildflower honey to it. It does give a pleasant tangy (sweet) taste to it.
