In an oven proof dish place the potatoes cut in half or quarters with skin intact.
Drizzle with lots of Olive Oil, sprinkle rock and normal salt and Oregano. Squeeze lemon Cover the dish with foil and leave it in the Oven till they are cooked.
Or another trick is to par boil them, rough up the egdes, then sprinkle liberally with semolina, then place in a tray and bake.
You do need to heat the tray up first with the oil in it, so that as soon as the potatoes go in, the oil starts to sizzle. And try and use avocado oil as it has the highest smoking point.
im gonna try a bit of everything at the weekend and see how it comes out, i dont think im gonna boil them again coz tht’s why they messed up in the first place:bummer:

i marinate a whole chicken and potatoes cut in fours in salt, pepper, red pepper, lemon juice, olive oil, vinegar, soy sauce, ginger/garlic and green peppers ...then pop it in the oven. or just leave it to slow cook on the stovetop if I want really well done chicken.
take some sand...warm it up and bury the potatoes in it and let them enjoy in the hot warm sand for few hours. then take them out and you'll have your roasted potatoes.
