recipe for gingerbreadcookies

Hi - I am more of a reader than a poster on this forum, but I thought I'd respond to your request. I made gingerbread men cookies for a holiday party that were really good. I followed the following recipe and it worked very well for me.

One trick if using cookie cutters, roll out the dough directly on the parchment paper (you can add a little extra flour if the dough is too sticky) and just pull away the scraps after cutting the cookies in the desired shape - this prevents the cookies from losing its shape.

Gingerbread Men Cookies

1 cup butter, room temperature
1 cup brown sugar, lightly packed
1/4 cup molasses
1 egg
2 3/4 cups all purpose flour
2 tsp baking soda
2 tsp cinnamon
1 tbsp ground ginger
1/2 tsp ground cloves
1/2 tsp salt

Preparation

CREAM butter, brown sugar, molasses and egg together thoroughly, until light and fluffy.

ADD remaining ingredients gradually to creamed mixture, mixing well. Chill dough for easy rolling.

ROLL dough 1/4" (6 mm) thick on floured board. Cut with gingerbread cutter or other favourite shaped cutters. Place on lightly greased or parchment paper lined baking sheet.

BAKE at 350°F (180°C) for 10-12 minutes, or until set. (Time will depend on size of cookies.)

COOL and decorate as desired.
