Make zucchini (tori) or Bhindi or, Gobhi or Egg plant kay pakoray. They will be half healthy at least.

But I'm afraid if I eat that fried stuff it will be too much for me, I cannot eat a lot of food, it's just impossible for me. My hunger mostly stops after a few spoons and I'm full then. :S Plus I have a tough time liking meat, uggh I'm mostly vegetarian, sometimes I make exceptions.

I love baking pies, baking pasta dishes, lasange, making home-made quiches etc and these are always a hit at my Aftari parties, as ppl' love to eat new and different things for Aftari.

I love copying the Tesco cheese sandwiches, which I was always obsessed with at uni! Hehe! They are so easy to make. To make the filling for this sandwich:

I grate both yellow and orange cheddar cheeses, add mayonnaise to the cheese, chives, pepper and tiny chopped onions. Scrumptious!

Also here is a snack to try making if you want a change from pokorays!

Cheese and spinach swirls. (This recipe makes around 20.)

Ingredients:

  • Puff Pastry Sheets
  • 1 egg
  • 1 tbsp. water
  • 1/2 cup shredded cheese
  • 1/4 cup grated Parmesan cheese
  • 2 tbsp of onion, chopped
  • 1/8 tsp. garlic powder
  • 10 ounces chopped spinach. (Dry out the water so the pastry doesn't get soggy.)

Method:

  1. Defrost pastry sheet until they are easy to handle.
  2. Heat oven to 400°F.
  3. Line a tray with parchment paper or light grease two baking sheets.
  4. Beat egg and water in a bowl with a fork.
  5. In another bowl, stir in the cheese, Parmesan cheese, onion and garlic powder in a medium bowl.
  6. Unfoldpastry sheet on a lightly floured surface. Brush pastry sheet with the egg mixture. Top with cheese mixture and spinach.
  7. Starting at the short side closest to you, roll up like a jelly roll. Cut into 20 (1/2-inch) slices. Place the slices cut-side down on the baking sheets. Brush with the egg mixture.
  8. Bake for 15 mins or until the cheese swirls are golden brown on top.
  9. Serve warm.

Here are some really simple and easy dishes to make along side pokora's and chaat if you want a change from the usual things:

Egg, potato bake with cheese

Ingredients:

  • 750g potatoes
  • 4 Medium Eggs
  • 1 chopped
  • 25g margarine or butter
  • 25g plain flour
  • 375ml (3/4 pt) milk
  • Salt and freshly ground black pepper
  • 1 can sweet corn (drained)
  • 100g grated cheese

Method

  1. Preheat oven to gas mark 4.
  2. Dice and boil potatoes. If using small potatoes then leave on the skin.
  3. Hard boil eggs. Cut into quarters or smaller if you wish. Set aside.
  4. Sauté onion in the margarine until transparent.
  5. Stir in flour, slowly add the milk. Stir. Bring to boil, stirring until mixture is thick and smooth.
  6. Season to taste and set to one side.
  7. Place potatoes, sweet corn and eggs in ovenproof dish. Sprinkle with cheese.
  8. Bake for 20 mins until golden brown in colour.

*Tomato and courgette Quiche. *(Substitute courgette with spinach if you want.)

Ingredients:

  • 225g plain flour
  • 125g unsalted butter
  • 3 eggs
  • 150ml single cream
  • 2tsp olive oil
  • 1 courgette
  • 12 cherry tomatoes
  • 25g Parmesan cheese

Method:

  1. Preheat oven to gas mark 6.
  2. To make pastry, put flour in bowl. Cube butter. Rub until it resembles fine breadcrumbs. Add one beaten egg with 1tbsp cold water and mix to a dough. Cover with clear film. Chill for 15 mins in fridge.
  3. Lightly dust the work surface with flour. Roll out pastry dough. Use rolling pin to lift the pastry into a 9 inch pastry tin. (You can use a rectangular tin or a round tin.)
  4. Press pastry into tin, carefully ensuring the pastry moulds into the flutes. Trim edges with a sharp knife. Return to the fridge for 15 mins.
  5. Line pastry case with a sheet of baking paper and on top pour baking beans. (If you don't have baking beans using heavy lentils.) Bake in oven for 15 mins. Remove paper and beans. Continue to cook for 7–10 mins until lightly golden.
  6. Finely slice courgette and halve tomatoes. Heat oil in frying pan and gently sauté the courgette until softened.
  7. Break the remaining eggs into bowl, add cream and beat with a fork.
  8. Arrange courgettes and tomatoes into the flan case; pour egg mix over. Top with the grated Parmesan and return to the oven for about 20–25 mins until lightly golden and set.

You could use potatoes, cauliflower, broccoli, sweet corn, bell peppers, capsicums, carrots, green beans etc instead of using spinach.

Expeiment with everything. That's what I do. :)

Jalpari90 - This is a really easy and simple recipe. If you want to make a pie with bottom and top crust then double this double this recipe and make two balls of dough instead of one. :)

*Pie crust *

Ingredients:

  • 1 1/4 cups all-purpose flour
  • 8 tbsp cold, unsalted butter,
  • 1/2 tsp sugar (add more if you are making crust for a dessert dish.)
  • 3-4 tbsp cold water
  • 1/2 tsp salt

Method:

  1. Cut butter into half inch cubes. Place in freezer for 15 mins or until thoroughly chilled.
  2. Using dough machine/ atta machine or a food processor, mix flour, salt, and sugar and pulse to mix.
  3. Add butter. Pulse 7-8 times until mixture has made pea size pieces of butter.
  4. Add water 1 tbsp at a time, pulsing until mixture begins to cluster together. (To check if it is ready, pinch some of the flaky dough and if it holds together, it's ready. If not add more water and pulse again.)
  5. Take dough out from machine. Place on clean surface.
  6. Knead it for a bit but don't over-knead it so crust stays flaky. (You should still be able to see little buts of the butter in the dough.)
  7. Sprinkle dough with flour on all sides, wrap in cling film or a damp cloth and place in fridge for 50 mins. 8. *Remove from fridge. Leave at room temp' for 10 mins. Sprinkle flour on it. Lightly dust work surface with flour. Roll dough out with rolling pin to make a 12 inch circle and roughly 4mm thick. *(Check with a metal knife to see if dough is sticking to surface. All more flour is necessary then.)
  8. Gently fold in half. (Or into quarter is that is easier.) Place on a 9 inch pastry dish/ pie dish or any round oven dish. Line up fold with center of dish. Gently press pastry against bottom and side of dish. Trim any over hangings with knife. (If you don't have a pie dish then to create the pie crust look, pinch the edges or press with fork to make lines.)

last time the recipe i used had the same ingridients. The proportion was 250 gm flour to 125 gm butter. It turned out good but didnt have all that great taste. Chalo let me try this. Thanks a lot iggle

I love making fruit punch drinks for Aftari as they are so refreshing. If you don't have all the ingredients below add anything you have e.g. apple juice etc.

Fruit punch drink.

Ingredients:

  • 1/4 cup water
  • 1/2 cup sugar
  • 1 nectar juice
  • 2 cups pineapple juice
  • 2 cups papaya juice
  • 1/4 cup fresh lime juice
  • 1/4 cup orange juice
  • Lots of crushed ice!
  • Mint leaves and lime or lemon slices for deco'

Method:

  1. In saucepan, cook sugar in water over low heat until sugar dissolves. Increase heat. Bring to boil. Simmer for 2 mins and leave aside to cool.

  2. Mix syrups, juices, nectars etc in a blender and mix unti liquefied. Chill until cold.

  3. When serving, fill glasses with crushed ice, pour juice, and deco' with mint leaves and lime or lemon slices. (Or add crushed ice and juice in a jug and allow ppl' to pour in however much they want.)

Simple and easy Fresh lemon drink recipe for Aftari time

Ingredients:

· 500ml water or soda water
· 3 large lemon juice
· 1/4 tsp salt
· 1/4 cup sugar
· Pinch of black pepper pwdr'
· Crushed ice (Place ice in a plastic bag or a kitchen cloth, cover it and smack with a roll pin until ice has all broken.)
· Lemon or lime slices for deco'

Method:

  1. Mix water or soda water, lemon juice, black pepper pwdr' and sugar together. Stir well to dissolve sugar. (Sometimes I grind the sugar before, which makes it easier.)

  2. Add crushed ice in a jug, pour juice and deco' with slice of lemon or lime.

  3. Serve!

OH gosh those recipes sound so heavy... :S I'm afraid I barely eat in general and then so much oh gosh.

I'll try the potato-egg-bake, although I don't like eggs, I think I need some eggs for my health.

Last year as I said I only ate daal ka chawal and that wasn't good at all.

Something that is a must in our house during iftari is Fruit chat! Not difficult to make at all. Just take different fruits, we usually have Bananas, apples, grapes, pears, peaches cut them into cubes. Squeeze a half lemon into it so that the fruits dont get that brownish color. And also add orange juice, little amount of black pepper and thats all!
I love to eat it with vanilla ice cream :D
