Boil some white rice. While its cooking, in a wok heat some oil, add shrimp, frozen vegetables, mushrooms, corn, whatever --season with salt, pepper, soya sauce, chilli garlic sauce, and whatever other Chinese sauces you have. Add an egg and mix everything really fast so the egg doesnt clump in big chunks. Add the rice when its done. Taste and add more seasoning accordingly. Can leave for 10 minutes more of "dum" after adding rice if you want

X2, theres a really funny but great book called "A Man, a Can and a Plan" thats filled with all kinds of really easy guy recipes, things to make from canned goods that any kitchen-inept or kitchen-averse person can throw together quickly and still impress his dinner guests!! Amazon carries it.
As far as nuking baked potatoes, I do it all the time! It works great and saves so much time! Wash and poke the potatoes. Put them on a paper towel and micowave them on high for 3 minutes. Turn them over and nuke for another 3 minutes. Gently squeeze them to make sure they're nice and soft, if not nuke some more. If you like to eat the skins, put them in a hot oven for a few minutes to make the skin crispy.
ps dont forget the poking part! If you dont poke the potato and nuke it anyway, it can (and probably WILL) explode in your microwave and THATS a mess!!!
MO3, yeah its a complilation of stuff from men's health, that book and 'eat this not that' are great books to have around.
I used to do something diff in college that someone had taught me, it was wash and slice potatoes salt, pepper, chat masala..mix it nuke it, enjoy :D
QUICK VEG CURRY
Chop all your veg into cubes, eg aubergine, courgettes, onions, carrots, peppers, beans etc. CHOP 2 or 3 tomatoes too. Put them in a big bowl. Sprinkle on some lemon juice, salt, pepper, teaspoon red chilli powder, teaspoon garam masala, teaspoon OR half of haldi, teaspoon of paprika, teaspoon garlic powder.
Heat oil in a pan, when hot, tip in the bowl of veggies n spices, stir and cover. Cook on high for about 5 or 10 mins, stir occasionally. Then check if done, if not, cook until ready.
