I make them all the time. They turn out pretty good. Yes you have to add egg. I can not live without washing meat, so yeah I do wash the chicken keema aswell. You just have to make sure the water has been drained.

For all of you expert chefs out there:

1. Is it possible to make nargisi koftay with chicken keema? Will I ruin the charm of this dish by using chicken?
2. Whether I make regular koftay or nargisi koftay, I will be using chicken keema. I don’t have a blender or food processor, so I would be mixing everything by hand. Do I need to add an egg to this mixture to keep the koftas from falling apart or breaking, or can I just mix well by hand and still achieve the “sticky” consistency that a food processor would give?
