Machine made qeema is only good for koftas. For rest of the things my mom always used to ask for hand chopped qeema (which is always easy to wash):
Following were the qeema dishes by her:
Aaloo qeema with all spices.
Bhuna hua qeema with only green chillies and garam masala.
Matar qeema with all spices.
Bullet green chillies qeema (hot one)
Kakronaday qeema with all spices
Methi palak qeema (good with boiled rice)
Awadhi qeema (dum wala)
Good tip CB, I will try the washing with vinegar next time. I do use vinegar when making chicken but never tried it with keema, I think it does makes sense! Cheers :)
Also try bhunna qeema which is very simple and easy to cook: for 1 kg qeema, chop finely 2-3 onions and fry them till golden. Then add your qeema, green rocket chillies, whole garam masala (bari illachi a must) 4 tablespoon dhahi. (add little water) when qeema is tender, dry it and add sliced ginger and mint.
ohh yes i get the difference now … now wonder sometimes the chillies turn out really HOT and sometimes they just dont taste like chilli ! now i know i got two different types
