Re: Proper Falafel
there are many different ways of making this but here's my mom's recipe...im not sure of exact amount since she doesnt measure it. we just go by approximation. ...(i can measure it out for u if like)
falafel:
1 can chick peas (8oz)
1 onion finely chopped
1 garlic clove (make into paste)
1 slice bread (soaked in a lttle water))
cayenne powder (just a little)
ground coriander
ground cumin
finely chopped parsley
salt
make chick peas into a puree
add soaked bread crumbs to puree (draining out as much water as u can)
and knead well
refrigerate for 1-2 hrs
roll into balls
and fry til golden brown ( frying in deep fryer works best)
tahini sauce:
1 cup tahini (you can find this paste in the arab stores)
1/2 tsp miced garlic
lemon juice (i prefer fresh)
salt (personal preference...u dont have to add it at all if you dont want)
refrigerate mixture for 30 minz so that the ingredients mix well.
