I naver forget the taste of mutton karahi that i ate in peshawar,i was searching for the recipe for a long time ,few weeks before i saw a programme on some tv channel in which a man was making karahi in a hotel,they didnt tell the recipe very clearly but that i follow is,
first they fry mutton in oil but quantity of oil is almost equal to mutton ,the pieces are small,and they fry it for almost 20 min contineously,he said mutton will half cooked while frying it,then he added equal equantity of tomatoes to it,he only cut half the tomatoe and added it,again cook until tomatoes tender then he remove the skin of tomatoes saying its not good for health anyway,then he added crush red chillies to it,oh yes i remember he added salt when he was frying the mutton in oil,after red chillies he added sliced green chillies to that,then he added some masala powder saying this is their special masala ,i think it was garam masala, anyway when i made it i add garam masala,ok after that he added very little like half tsp of dhania powder and black peppers to it ,and cook for few min,in the end garnish with green coorinader.u can use less oil or drain oil in the end.
i made the karahi last week following same recipe only i add ginger,garlic paste after frying mutton and in the end add sliced ginger to it and littel water as karahi was too dry .it taste veryyy good,so girls give it a try.
but remember to make it in a Karahi or heavy based pan.
hmmm but anyone have any other tip for peshawari karahi please tell us.
Actually they make it in dumbey ki charbi (Lamb fat), not the vegitable oil
but you wont find it easily
The famous name is “Namak mandi ki karahi” it has distinct smell ( due to charbi and almost no spices) and very good taste
Oh you dont add spices / garam masala either
