I have the same issue…no matter how DARK i brown the onions…without burning..my salan desn’t look as nice and brown as my Khala…

are u putting in enuff dhaniya powder? that also makes salan brown.
also.. bhunai is what really makes the curry turn dark....

aww this thread reminds me of "Do-Pyazaa with beef" my mom makes. It is cooked with lots of onions but its soo good

I bhun my masala for ages and agess…and it still doesn’t get dark.
