This is a basic recipe that I use...
Use spring onions instead of the regular ones, they give a boost to taste. So all you need is
Eggs Spring onion fresh green chillies
salt red chillies (laa mirch)
Finely chop spring onions and green chillies.
Add salt and red chillies.
Mix it well BEFORE adding the eggs. Normally the red chillies clot up if we add them directly to eggs so this is a trick that works well.
Add eggs and beat the mixture.
Heat oil in frying pan add mixture to the middle of the pan and let it spread to take shape..when done on one side flip and cook the top.
Variation: Sometimes I add shredded mozzarella or cheddar cheese to it. I don't add it in the mixture cos it makes the omelette a bit mushy. Add it when the eggs start to set in the pan..like half done, add cheese on top, let it melt and then flip side.
I think this is the closest recipe. However, should I fry the onions first - they used to be quite soft? How many eggs should I use per serving? Thanks by the way, im feeling nostalgic :)
