I personally love lots of vegetables in my omelet.

Make sure your vegetables are finely chopped.

Spinach, mushroom, tomato, onion, jalapeno, bell pepper, salt, black pepper and 2 eggs

When one side is done(light brown), flip, cook other side for a min, put cheese, fold and take it out after a minute(enough time for cheese to melt).

Here is one I made while back (had no mushrooms, so I put carrots instead (meh not bad)).
