as far as chinese salt concern i dont know whether it effects health or not but usually people says that its haram and all from muslims point of view....may b that is why people avoidit

ginger and tomato will give the broth a good flavor. So will the cinnamon and blk alaichi, use really small quantity and take them out once the yakhni gets few boils. Also make sure you are making the yakhni with boned meat and not boneless meat.
i m so agree with broth lusi are sure about ginger ,tomatos???? i never heard it and putting cinamon and black alaichi???? will not these 2 thing give u desi garam masla flavout to the soup

and how long u cook/boil the broth?some one was telling me that we shouldnt cook broth for so long ..cooking for long ruin the taste???
and even cooking experts advise that cook broth on slow flame?

yes, i have added cloves to the broth too. The key is when the soup gets 2-3 boils, then you should lower the heat and let it cook for a little bit. The heat should be b/w medium and low.

I remember back in the days people used to say that. It depends on what the salt is derived from, whether its a meat source or any other vegan source. I get National’s Chinese salt where I live & it says Halal on it.

You can freeze the stock if you like. I have recently started doing that & it taste just fine. As long as you don't put the cornflour & egg I would assume you can freeze it. Just make sure the chicken is not well done. When you boil the soup again & add eggs & cornflour, the chicken pieces will have enough time to tenderize.
This recipe yields 30 servings or three large bowls.
