I suggest you get a pressure cooker for your pakistani cooking. It's excellent. Cooking time becomes half and somehow the meats cook much better...faster !!
You can find pressure cookers anywhere...including at your local target store.
Roman, the remaining water in all of your dishes is because you lack patience. Khaana poora pakta nahee aur tumhaari raalaiN tipakna shuroo hau jaati hain. Sabr say kaam lia karo and bhoonafy til oil separates... I can't over emphasize the step "oil separates" when it comes to desi pakwaan.

Diva, I love pressure cooker. I own a big one. I always make my kalay channay in it. There is just no other way for some of the dishes. But never thought qeema in pressure cooker. hmmm...
