i love masala dosa and sambhar...!!!! they're both so easy to make but im gonna try namkeen's recipe soon....:)
sambhar is a side dish so it goes with anything...i love sipping it like a soup...it tastes so yummy!!

njaveed, i think indians use it a lot, but i have never heard of an Pakistani using it so far. Its easily availible in indian grocery stores.

you get the oily variety as well as the regular variety in tuur dal. get the regular one.

no, never mind...I was thinking urad dal is toor dal but it's not...urad is same as maash

Those who made it - does it taste any better than what you get in a restant? Cos it sounds tasty but too much work!
Question - what temperatur should the oven be set for the overnight fermentation? Because I think at even 100 deg F, the misture you're talkinmg abouit will become a solid burnt cake within an hour!

Tariq , it tasted wayyy better than the resto stuff and i LOVE that too. But i agree it was a lot of work and steps involved. But the good thing is that you can prepare everything the day before except dosas and just reheat the next day.
To ferment the daal mix, you dont turn the oven on. you just leave it in a warm place, in my case, i had used my oven to bake something previously, and after i was done and the oven had cooled down considerably, i just put the daal mix thingy in it and let it stay there overnight.

Oh! Thanks (not that I will try making stuff like that - my culinary skills are limited to 7 and 12 decker sandwiches with a later vintage glass of h20 or v8)

maybe you should spread it thinner? perhaps nimko can help out more.
i was going to ask you how your dosas turned out, were they soft like they are at restos? mine werent very good :( I think the daal mix didnt ferment like it should have.

was your batter too thick, njavaeed? maybe you needed to add more water in it. or maybe you had too much urad dal in it.. as i said before if you like ur dosa crispy, increase the ratio of rice:urad dal, and if u like 'em softer, then increase the urad dal.
also, what are you using to spread the dosa? if you're using something with a completely flat surface, you won't be able to make thin dosas. i'll post a pic of the ladle i use to make dosas, it's got a round bottom which helps me thin out the dosa wherever the batter is too thick.

Ira my dosa was pretty soft (I read you comment about yours not being soft and nimko suggestion of reducing the rice so instead of using 2:1 ratio I used 1.5:1)
Namkeen I think I used back of the spoon to spread dosa batter in the pan? What should I be using?
How thick the batter should be? Should it be like water or just a little thicker than water?

definitely thicker than water. sorta like a hearty soup.
