I just saw the pic , pelay load nai ho ri thi wo ... yeah you are right , there is a bit too much oil, khair adjust that next time... just take the usual tablespoon , instead of some big spoon of oil ...

the masala isnt as much as I normally have , I like to keep lot of masala coz then it doesnt become too dry to eat with a roti / naan ...
but for that I make the paste of loads of tomatoes .. Like nearly about 12-15 ...

But I didnt want you to add as many tomatoes this time coz then it would have become too tomato-wy for you .. khair mashallah the dish is looking perfect ... the color is awesome ... and usually market wali karahi has very little masala in it too .. so this looks super fantastic ..

Now about shami kababs ... its a slightly tough one , but lets give it a try .. I will write up the recipe shortly .. what meat areyou rusing? I normally use chicken or lamb .... but you can use beef, chicken , bakra or what every meat , but let me know what it is so i can write up the ingredients accordingly ..

I want to try with chicken. Give me a recipe that contains easily available at-home kind of ingredients.

I didnt put too many tomatoes because of the colour it was giving and my family avoids tomatoes mostly. Anyway, although it looked reddish and oily the taste was good.

Daffy , start writing down the recipes of the dishes you are making … coz usually we tend to forget them and since you are doing so much mehnat , the last thing you want is to forget them :cb: ..

Plus, this book in which you are writing the recipes of the dishes you are learning .. will help you in time of need ( after shadi )

**Shami Kabab Recipe

**soak half a cup of channa daal in water overnight ...

Wash 3 cups of boneless chicken pieces and keep aside ..
Slice one onion thinly and keep aside
in a plate take out the following spices: whole black peppercorn about 5-6 , three cloves, small half inch piece of cinnamon...

Now take a pot and add in one cup water .. when it starts to boil, add in the channa daal, chicken, onion, whole spices .. and one and a half tsp salt .. cover the lid of the pot and reduce the heat to lowish medium... stir after 15 minutes ...

you need to cook this mixture until:
1- daal seems cooked but still doesnt mash at the touch of the spoon.. you can try one or two dana's of the daal ... if it gets over cooked in the process , you wont be able to make kabab ... if it remains slightly undercooked, koi fikar nai, rest of it will get cooked during the kabab frying process ...

2- the chicken should also be cooked but still hard .. if it gets too soft you might find it hard to make kababs .. so keep checking ...

The water should dry up completely .. but if it dries up before the daal and chicken get to the above mentioned consistency, then add quarter cup water .... right when you believe both chicken and daal are done, heat it on high fire to ensure water dries out ... this should be done no more then 3-4 minutes and dont forget to stir it otherwise it will stick to the bottom of the pan ...

now take it all out and leave it aside to cool ... when done, now time to chop it all up... in the chopper add 4-5 green chillies and give it a good run so the chillies get chopped .. then add half cup fresh cilantro .. and run the chopper again for a minute , dont mash it too much or it will become liquidy ... now add the chicken and daal in there .. half tsp garam masala, half tsp red chilli powder , if you have imli at home, just add quarter tsp of imli , if you dont have it , no problem dont worry about it ... dont run the blender as yet , we have to add and egg too .. beat an egg and only add half of it into the mixture ...

Now give it a good blend.. it should get done in 3-4 rounds of the blender ... dont over do it , werna keema will become all runny ...

once its all blended in nicely ... take it out .. wet your hands, start making flat patties ... meanwhile in a frying pan heat oil no more then three tblspoons ... and when oil is really hot, dip the kabab in egg and on to the frying pan . fry ... and enjoy :@:

TIps:
If kabab mixture becomes too runny .. then add half cup bread crumbs and wait for 10 minutes before making kababs ...

If it remains too thick , then add a few drops of lemon juice ... that will help settle the texture of the mix.

daffy , its good to keep the prints , but believe me , write down the exact quantities and the steps of the recipes you yourself made , it will help you so much … coz it will help you establish your andaaza … you will know how much oil to put or spices to put …

Like i hardly ever write the recipe that i learnt from else where , but i always write how and what steps I carried out to do a recipe .. that is very very helpful …

CB, I went to make shami kababs but there wasnt any boneless chicken; there was chicken with bones so i ended up trying Chicken Pulao instead. Shami kabab insha Allah today!

This is how i made it and it was so yummy! Very neutral tasting and the look was very clean the way i normally like it.

CHICKEN PULAO RECIPE:

  • I first put sabut hara dhaniya, 3-4 cloves (laung), a bit of zeera, 5-6 whole black pepper corn, Daar cheeni (Cinnemon), a masala item i forgot :blush: and tied them all up in a cloth
  • I added water and soaked the knotted up cloth in it. Then i put in the chicken and let it all boil for 10-15 minutes
  • When i checked, the masala tasting had all been well mixed in the water.
  • In another pan, i put in some oil and thin sliced onions. When the onions turned a little red, i added some zeera and then took out the bioled chicken pieces and put them in this dish. For a while i let them cook. Later, i added some salt to it.
  • After they turned slightly brown, i put in 6 glasses (cuz of 3 glasses of rice i had taken) of the masala soup.
  • By this time, the soaked rice would have been a little soft so i put them in that pan as well.
  • After almost 15 minutes, they start taking that look.
  • Then i put them on dum.
  • I ate them with Pudeenay ki chatni & Dahi Phulkian. :wub:

Hey CB - In Ramzan ive made a motto to try a new dish every day depending on what ever items are available at home.

For the first Iftari i tried Mexican Chicken:

It was an easy recipe. First i got boneless chicken and cut it into even smaller pieces. Separately, i made a paste of garlic, 3-4 tbsp of vinegar, salt, and some white pepper. I soaked the chicken in the paste and kept in fridge for 20-30 minutes. Then i took very less oil to stir fry the chicken. Once it is done,I added tomato paste of almost 4-5 tomatoes. Later I added tomato ketchup. In the end some thinly sliced shimla mirch. It turned out yummy, masha Allah! :blush:

I got the recipe from Dalda’s recipe book. It did look like Chicken karahi a bit too. But i guess difference comes with sauces. I didn’t add too many sauces because of a soar throat. So if you add soya sauce, vinegar, etc. the taste may change accordingly.

I have a picture of the M.Chicken at home but of pizza i don’t have any :bummer:

:omg: awww you are mashallah learning .. Yes thats how I learnt everything after making mistakes .. cooking is one of those arts that you just cant learn unless you make do it yourself ..

Mashallah you are good cook already .. the rice look beautiful .. and so does the salan , abit oily , but then again you know now how much oil to add … but it looks rocking mashallah …

I am learning from each experience. I have 2 things to ask:

  1. I am a bit scared of using the pressure cooker but otherwise any sort of meat takes ages to get soft and by the time the masala starts to evaporate. I do splash with some water but even then. So what should be done?

  2. How can we ensure that the rice do not break or join together? For the purpose, i put them on dum that did help but i want to be sure of it the next time i make them.
