**There are two main kinds of Wheat…i.e.
-
Hard “Red” winter wheat which is mainly used to make bread because it is high in Protien. this wheat grows in the lower Latitudes (Kansas) and is planted in October and harvested in spring.

“White” wheat that is planted in spring and harvested in September in the upper Lattitudes like Washington, Montana and Canada.
this has a distinct Light colored grain…its flour is lighter than the winter wheat…is used mainly for making Pasta…
