Re: kashmiri tea and cuisine
the color sabz means green...yes...
but typically people call that pink tea...sabz chai.....not sure why...
the leaves start out green, but depending on how u cook it, it turns a pinkish shade
Re: kashmiri tea and cuisine
also kashmiri chai, is a light brown yellowish shade, made with alaichi and all that jazz...and it has no milk...totally yummy.
I remember walking around in the cold in Murree.....this little kid was going around selling kashmiri qava...delicious
really
so its one of those Blood and Kidney pie type of thing that has no blood in it or sweetbread that is not sweet neither bread but a cut of meat
I never tried to make it at home but I had it once at a Pakistani restaurant in New Jersey. It was amazingly good. I forgot the name of that restaurant. It was either Shalimar or Sheezan. NJ people help me out here.
They serve Kashmiri chai - the pink tea in Shalimaar. It's really good! I can't drink it everyday but once in a while it's great.
Also great to serve on a dawat.

Thank you, shay and tlk, you pakistani blondes, take notes!
sabaz chai = pink/kashmir tea! When you two goto Pakistan, and ask for sabaz chai, what you'll get is kashmir tea, which is pink in color and tastes salty! If you want green tea, ask for kahva.
Re: kashmiri tea and cuisine
umm isn't making kashmiri chair a long process? as in once the ingredients are mixed together, you must stand over the pot and constantly stir the mixture until it's ready?
Re: kashmiri tea and cuisine
^ Spock you are right - these are different types of kashmiri chais.
recipes are a bit different so they result in the different colors. I believe some have soda in them and the others have salt.
I think they were just correcting your Urdu that subz not equal to pink
