if i wanna make this ahead of time… can i just reheat for dawat… or woukd it taste odd??

example…dawat is at 6… i make it say at 5.30?

apso… by splashing in cold water… do you mean to trickle it in… ?? how does one splash in water… cheeta maaroo…with my hands?!

Yes you can make it a few hours in advance.Just keep it at room temperature and add in milk and cook whenever you want to serve.It tastes perfectly fine.

The cold water trick is that when the chai has been cooking on the stove for say 20 mins,add a glass of cold water to it from a little height (be careful not to splatter yourself) and I use a whisk to ‘phaint’ it a few times.I let it cook for another 20 or so mins and add another glass of cold water and repeat the whisking.Cook another 20 mins or so.That is it.

Someone mentioned adding some green cardamom and star anise and saunf.I tried that and it tastes good.

also… how thick is it meant to be??? i mean condense milk is oretty thick…

ive never had it… what consistency should it be??? like refular doodh patti chai??

^ yes.

I tried using evaporated milk and it turned out nice too. I strain out the qehwa and refrigerate it for upto a week and use by adding milk as needed.

Add very little saunf because it might give a brownish colour to the qehwa. Star anise is a must for me in kashmiri chai.

Authentic Kashmiri pink tea there is no sugar added and no cinnamon or anise. It’s called noon chai or sheer chai and it’s salty

CB I tried your recipe, it turned out greaaattt, even though I used 2% milk it was still creamy and flavourful…yumm I will make it again tomorrow. Thanks
