Lusi they were crispy. They were kind of dark brown. I thought that's how they are supposed to be. How much do you cook them? I love karhi so much. At the same time I have always been intimidated by this dish & although karhi was good it just seemed like too much work.
pakoras should be golden brown...atleast that is how i make them. :)

^ See mine's came out really dark & I fried them in really hot oil. Should we fry pakoras on medium high heat then?

it should medium heat, the oil should not be burning hot. The best thing to do is check by dropping a drop of besan mixture, if it floats on the oil, then your oil is ready.

use buttermilk instead of water. heard it makes it good.
