karahi: dry masala
qorma: curry base is fried crushed fried onions and yogurt.
nihari: a different blend of fragrant spices, thickening agent used, beef shank is the preferred cut here
paye: similar to nihari except that the type of meat used is what determines its consistency (goat feet)
salan: a generic name for a curry based dish
handi: again a generic name for a dish, used for exotic dishes these days to give it a traditional twist
curry: the english term for a gravy based dish
