If they cant find any such masjid, they can have a simple nikah done in the presence of 2 aaqil/baaligh muslim males. that would do.

There would not be a Nikah because it has invalidates the pre-requisite of the male being a Muslim. Again from my limited knowledge the Quran forbids Muslim females from marrying non-Muslim males (No racial constraints). Therefore if something is explicitly forbidden in the Quran, there is no way it would be valid.

A Civil Marriage would be the only route.

EDIT: I’m not trying to start any religious debates. Simply stating that what the girl wants does not exist.
