Even now it is very rare , may be Thanksgiving or Xmas when Americans really cook from scratch. And Americans have the biggest kitchens in the world.

That's nonsense. Everyone in my family cooks just about every meal from scratch. I don't know any American who doesn't cook from scratch on a weekly basis. Maybe people who are single don't cook often, but those with families certainly do, even if they work.
