Chicken salad sandwiches:

Boneless chicken cubes
salt
black pepper powder
red pepper powder
red onions
celery
bell peppers
2 tbsp ginger/garlic paste
Mayonnaise

Finely chop up your celery, red onions and bell peppers.

Boil chicken cubes with salt and ginger/garlic paste until tender

Once the chicken is done, you can either shred it yourself or put it in a chopper...the latter works well for me.

In a big bowl, mix in chopped chicken and chopped veggies.

Add in the mayonnaise.

Salt and black pepper to taste...if you're like me and need a tad extra spice...add in some red pepper powder. Its awesome!

do you toast the bread? how do you serve it to make it look pretty?

If I make this just for home use, then I just toast wheat/white bread, spread and serve.

If I make it for a party or get together I do one of two things:

  • I get some Pepperidge Farm White Sandwich Bread, cut off the edges, toast lightly, spread, cut in triangles and serve. If you want, you can cut into even smaller triangles, put a decorative toothpick in it and serve as an appetizer.

  • Pepperidge Farm also makes a very thin sandwich bread that is great for party use. You can spread a very very very thin layer of butter on one of the slices, spread salad on the other, put them together, cut into triangles and serve. Dont toast this bread because its too thin and might turn hard on you instead.
