Hunters beef

I wont call it shami kabab texture. I have eaten both, so I like to say that they roll differently in your mouth. Khatti may confirm, but I remember meatloaf to be chunkier yet creamy in texture. Shami kabab is more like a thick paste and drier.

Lol, khatti posted before me already. On my defense, I had meatloaf only once in my life, and that also good 15 years ago

Hunter beef has rashay in it…shami kabab and meat loaf is processed or ground. Hunter beef is not.

I’ve had hunter beef once and it was really goodddddd.

Thank you Khatti and TLK. I think I’ve seen egg as a ingredient in meatloaf and i know that it’s also used as a binding agent in shami kababs, so I thought that they both would be similar.

Brisket would also be a good cut to use for making Hunter Beef…it gives those “reshas”…I may have to give it another go if I can get a proper recipe lol

i think the thigh meat [raan kaa gosht] is full of reshas. in the subcontinent they have tandoorii bakre kii raan. :slight_smile: i LOVE it!

Yep i tried it twice and it was quite close to the ones we usually eat in restaurants. What i did was i got the undercut (now im not sure if this should be always used but I used this whenever i make). Marinate it with Salt, Lemon juice, Vinegar, Qalmi Shoora (Saltpeter) Its usually available at Indian shops, Black pepper and little Soy sauce for taste. Before Marination poke the meat piece with forks all over so that marination would go in. Then leave in fridge for 2-3 days and keep on turning it once or twice a day. Then cook it without pressure cooker and before serving cut into thin slices shallow fry and all the yummness is ready to be amuse you :smiley:

Pleasure is all mine. Bint e naeem, it can be eaten as it is but I prefer eating hunter beef sandwitch

This time on Iftar I kept it at side with bread pieces also there and told ladies to use it as they like

And yes I sometimes dont fry just cut it in pieces it all depends on your preference

Hunter Beef Sandwiches are the best! Reminds me of spending the summer at my taiya’s house in Karachi…with home made fries/chips and a cold glass bottle of coke :naak:

Whatever size you want but usually undercut is big :), however you can cut it down to accomodate as per your requirement

In US, the cut of beef to ask for would either be boneless bottom round (roast) or brisket if you want more “resha”/stringy

Ammi used to roll the fried pieces for us in garam roti with butter smeared on it. Oh boy, that was to die for, much much better than a regular sandwich.
