ohh that actually sounds good , but unfortunately our oven isnt too big :( .. so i am wondering if shifting the rice to smaller oven proof dishes and then doing the dum would help at all?

CB if you find a casserole dish they usually fit into a UK oven and work well :)

Yes, that's an option for you. However, it seems like a bit much work, no? Cooking in one pot, and then having to transfer the rice over?
Just make sure that the dish you're using has a cover as well, otherwise it won't work. Try it out, see if it makes any difference in the rice :D

Yes TLK, I have an induction hob and most induction pots are not heavy based or heavy walled :( .. so i know for sure that is one issue ...
smilestar, yes you are right , its indeed alot of work , specially when cooking in large amounts for dawats...
Re: How to do the “dum”
Do you have a garage ? If yes then setup a gas fired cooking range in garage for preparing dawat ka khana. You seems to be fond of throwing parties for your paitoo friend all the time. ![]()
