I made spaghetti squash for the first time after reading that it’s a much much healthier alternative to pasta; it’s low in carb and calories and the taste is mild (though a bit sweet for me, so you may want to cook accordingly…) so you can do pretty much the same thing you’d do with regular pasta. I sauteed it in a little bit of olive oil, salt, and coriander. If you haven’t had it, I’d say it’s an excellent substitute (except for those days when there’s just nothing like good ol unhealthy-full-of-evil-processed-white-pasta-wiht-equally equal evil salt and butter.)

Another thing I've heard, is that you can use cauliflower as a substitute for rice or mashed potatoes. I've had "mashed" cauliflower at a restaurant once and it's not bad... would definitely try the rice and will report back if/when I do.

cauliflower mashed potatoes is pretty common, I've heard that you can barely tell the difference...........I think it is more mind over matter because I can't stand cauliflower
