ya peel off the skin, brwon sugar would be good but if you don't have it on hand just use the regular one.

they sittin in a fridge .. without any labels on em :-p
oh one more thing .. after making it .. how long does it last? is there any chances of growing molds in it?

Well make sure you put them in clean and dry air tight container/bottle. It should be good for 4-6 weeks or even more. Add a little lemon juice while cooking, it is a good preservative and would enrich the flavor. Just discard it when it starts smelling funky or you see bubbles on it. Don't put it in the fridge until it has completly cooled otherwise vapors will form inside the lid and would increase the chances of mold. Always use a clean dry fork/knife/spoon and if you decide to lick it, use a new one ;-)
