Here's my golgappa recipe AND IT WORKS EVERY TIME:
Mix half maida and half SOOJI (semolina) add a pinch of salt.
With water mix til hard and add oil or ghee to soften dough. Leave for a couple of hours and then roll out. and cut out with coockie cutters.
Fry on medium heat. Best is to hold them underoil to make sure they balloon!!!
Best is to be with two people one fries and one rolls!!!
