Do they still test the following? :
gearaxy - using manual stick shift mechanisms to bring the car to a halt in case of break failure?
driving through traffic cones and hurdles?
driver distractions - where the examiner does something stupid during the test to observe how you handle it... e.g. opening the passenger side door, or pulling the hand break.
These used to be some of the more difficult aspects of driver testing in the Emirates many years back... don't know if things have changed now.

gear x: no more but I did get its training. (Reason: The gears of training cars that they use to have for test too expires soon :D )
Driving through cones also no more.
driving distractions: dont know.. as never got any stupid police officer at the test field.
P.S PLEASE DO NOT enroll in Emirates Driving Institute, Qusais. I failed 7 times until I switched schools to Belhasa Driving Centre in Al Wasl, Jumeirah and passed on first try.
I don't think it has anything to do with the driving institute. Luckily I never had to go through driving school in Dubai, because I just got my Austrian license converted. But my wife had to do the whole procedure and she did enroll to Emirates Driving Institute in Qusais. Passed on her first attempt.

Ok it could be that I was doing it in manual? 
But seriously I was involved in a car accident where the girl giving the test in front of me did not drive properly and our car was hit by a truck. I incurred spinal injuries and was in the hospital. Maybe that is why I am biased against Emirates Driving Institute.
They were from Abot Abad NWFP.
WOULD RECOMEMDED GALADARI DRIVING INSTITUTE AS I GOT MY MANUAL LICENSE IN FIRST TRY.
WELL IT ALL DEPEND ON YOUR INSTRUCTORS & AREA OF TRAINING
If you want I can take a photo of that assessment paper and post it here for you so you can have a rough idea of what exactly they are looking for.
