i make dal a coupla ways. and i only use masur ki dal.
1) pressure cook the dal with extra extra water, salt and haldi. in a separate pan, heat olive oil and fry slices of garlic til the garlic is caramelized. pour this tarka into the dal. the simplest dal, ready in 20 mins and oh so yummy with chaaval, or even as a nutritious soup, esp if you add shredded meat.
2) traditional dal fry. pressure cook dal with salt, haldi and a clove of garlic sliced. in a saucepan, fry onions, ginger garlic green chilies paste til the onions are browned, then add pureed tomato and bhoonafy. add a lil dhania powder, salt to taste. add cooked dal, bring to a boil and garnish with finely chopped dhaniya leaves
3) carrot dal - the one hin33 loved! it's a different recipe and a great way to get veggies n dal into ur diet.
Ingredients:
A cup of chopped sweet carrots (you can also use shredded cabbage or cauliflower florets)
slit green chilies
Dal - cooked til tender with haldi and salt.
1/2 tsp zeera, 1/2 tsp whole black peppercorns
Heat oil, fry zeera, slit green chilies, add the veggies, salt. cook until the veggies are done. take the 1/2 tsp zeera and 1/2 tsp black peppercorns in a glass dish and stick it into the microwave for just under 20 seconds til you hear the first peppercorn popping. the spices will be slightly roasted with a nutty aroma. put the zeera meeri into a spice grinder and make a rough powdered mixture. add this to the vegetables and fry for a minute. lastly, add dal and cook on low-med for abt 20 mins to bring out the flavours.

I made Palak Daal yesterday and it turned out great although I was sick of the usual daal flavor so i altered the recipe a bit
Instead of just using Moong Masoor combo, I used a packet of Soup Mix which you can get from the grocery store.
Boil it with water with Namak, mirch haldi for half an hour
Blend it with hand blender to give it the right consistncy
Add 3 table spoons of tomato paste to the daal and one teaspoon of powder zeera
Add palak and then do the tarka
The tomato paste gives it a nice texture and flavor.
