Re: Cupcake topping/frosting/icing

My cousin asked me if I could make some lovey dovey themed cupcakes for v-day or her upcoming anniversary so I got to work playing around and some of it was good some of it was bad lol but you never know until you try right?

I hadn’t ever done lettering before so that was my first go but tonight i’m going to try it with royal icing instead of buttercream which is a bit easier to work with. The flower technique on the whole cupcake was new to me also. it was a fun night of mistakes and scraping off icing and trying again.

I think that I can easily make this idea i came across online so I told her I’ll buy the supplies and try it out and if it works i’ll make a box of swirled cupcakes with some lettering in the sweetharts candy fashion (be mine, true love, dream, I love you, got love?..) and then make this bouquet:

Cute aint it?

Re: Cupcake topping/frosting/icing

^ That is soooooo adorable!

Re: Cupcake topping/frosting/icing

I make the stiff royal icing - is there another kind that’s creamy and spreadable like you used? What’s the recipe you use?

Re: Cupcake topping/frosting/icing

I am so freaking jealous. Wish I could bake cupcakes like that! I have to resort to Kitsch, Sugar Daddy and Bloomingdales Bakery, for my cupcakes. Sigh.

Re: Cupcake topping/frosting/icing

i use wilton's buttercream recipe and add extra sifted powdered sugar for flowers and borders because it holds the shape of whatever tip you are using well. However when I'm just covering a cake i use the basic wilton buttercream recipe or I may add a small splash of milk to make it creamier and spreadable. I have also found that if you take a cup with ice water and dip your spatula or butter knife or whatever you use to spread cupcakes it helps smooth the surface.

royal icing i barely make because my mom's recipe calls for egg whites and with samonella cases on the rise i decided to finally buy meringue powder and try wilton's royal icing recipe. I haven't made flowers with it but I would use it as a drizzle on coffee cakes ...all in all i am not a big fan of royal icing bc it's hard but that makes it perfect for lettering.

Re: Cupcake topping/frosting/icing

hi ladies, I just wanted to post an update. My cousin’s wife showed me a few pics of some cupcakes and wanted me to make her some for her anniversary. I finally bought the supplies for the cupcake bouquet and it didn’t turn out at neat as I would have liked it to but eventually I got the hang of things. Inshallah next time I do a better job. It was fun and then I made a small box of some lovey dovey cupcakes as well.
