my nephew was just diagnosed with it. (he's almost 3) it was really stressful when it came to figuring out what to do with his food. his famiyl basically decided to bring home a chaakki, or a grinder. they now make everything out of cholay, chanay, chawal, millets, etc. his mum's really good at baking and stuff, and likes to experiment with new foods.

we did a lot of research on stuff that doesn't contain gluten. i think one of the grains that you feed to the cows (back home), they use it here (west world), as a healthy alternative to white bread. i think it's buck wheat. i think they are going to start buying that stuff and grind that home.

rice is basically your best friend. it's common, so it's not too bad. chinese stores has a lot of stuff that is made out of rice. so it's a good alternative. pastas, noodles, etc. can be found that has is made out of gluten free wheat. (processing i guess?)

also, we looked up lots of special coelic disease friendly recipes, and some of them were really good in telling you that what is allowed, what isn't, and what are the ingredients they are using, and where you might be able to find them.

it's not the end of the road. there are plenty of stuff that you can still eat. pakoray for example. experimenting is the key. and just like with any other food allergy, don't eat anything from outside. you don't want to take that risk. i don't know that happens if there is any gluten, i mean when my nephew wasn't yet diagnosed, he was really sickly, and hated to eat anything, cuz he wasn't absorbing any nutrients. but now he's on the gluten free diet, and from what i hear, he's beginning to push down his older bajis :D

just do your research, online etc. google it, and there are plenty of websites that tell you what is allowable and not. i suggest start with wikipedia. it's common person friendly.
